La débâcle alimentaire

SAN FRANCISCO – Deux maximes nutritionnelles apparemment inoffensives sont à l’origine de tous les maux alimentaires: Une calorie est une calorie, et Vous êtes ce que vous mangez. Ces deux idées sont désormais tellement ancrées dans la conscience collective qu’elles sont devenues pratiquement inébranlables. En conséquence de quoi, et avec l’aide et la complicité de scientifiques et de politiciens apparemment bien intentionnés, l’industrie alimentaire a accablé le genre humain de la peste des pathologies métaboliques chroniques qui menacent de mener à la ruine les systèmes de santé partout dans le monde.

Les Etats-Unis dépensent actuellement 147 milliards de dollars par an en soins de santé liés au traitement de l’obésité. Auparavant, on pouvait dire que ces pathologies étaient caractéristiques des pays affluents, mais l’ONU a annoncé l’année dernière que les maladies métaboliques chroniques (c’est-à-dire diabète, pathologies cardiaques, cancer et démence) constituent une menace bien plus importante dans le monde en développement que ne le sont les maladies infectieuses, Sida compris.

Ces deux maximes nutritionnelles accordent du crédit aux corollaires intéressés de l’industrie alimentaire : si une calorie est une calorie, alors n’importe quelle nourriture peut être intégrée à un régime alimentaire équilibré; et, si nous sommes ce que nous mangeons, alors chacun d’entre nous choisit ce que nous mangeons. Encore une fois, ces deux postulats sont trompeurs.
