SAN FRANCISCO – An der Wurzel allen Ernährungswahns liegen zwei scheinbar harmlose Grundsätze: Eine Kalorie ist eine Kalorie, und man ist, was man isst. Beide Vorstellungen sind derart fest im öffentlichen Bewusstsein verankert, dass sie so gut wie unanfechtbar geworden sind. Die Folge ist, dass die Nahrungsmittelindustrie, assistiert und unterstützt von scheinbar wohl meinenden Wissenschaftlern und Politikern, der Menschheit eine Plage chronischer Stoffwechselerkrankungen beschert, die die Gesundheitssysteme in der ganzen Welt in den Bankrott zu treiben droht.

Die USA geben zurzeit jährlich 147 Milliarden Dollar für Leistungen im Gesundheitssystem aus, die auf Fettleibigkeit zurückgehen. Früher konnte man noch sagen, dass diese Krankheiten vor allem wohlhabende Länder betrafen, aber die USA haben im vergangenen Jahr verkündet, dass chronische Stoffwechselerkrankungen (einschließlich Diabetes, Herzerkrankungen, Krebs und Demenz) für die Entwicklungsländer eine größere Bedrohung darstellen als Infektionskrankheiten einschließlich AIDS.

Die Nahrungsmittelindustrie folgert eigennützig aus diesen beiden Ernährungsgrundsätzen: Wenn eine Kalorie eine Kalorie ist, dann kann jedes Nahrungsmittel Teil einer ausgewogenen Ernährung sein, und wenn wir sind, was wir essen, dann kann jeder wählen, was er isst. Auch diese beiden Schlussfolgerungen sind falsch.
