BERLIN – En décembre prochain, les chefs d’État et de gouvernements se retrouveront à Paris pour la Conférence des Nations unies sur les changements climatiques, où ils devront après d’âpres négociations conclure un accord détaillé sur la réduction des émissions de carbone et l’atténuation du réchauffement planétaire. A l’approche de cette réunion, les gouvernements devraient prendre note d’un fait crucial, mais souvent ignoré : la principale cause de la dégradation de l’environnement et de l’épuisement des ressources est le changement de notre alimentation – qui plus est, une alimentation peu propice à une vie saine.

Au cours des dernières décennies, l’augmentation des revenus a entraîné une évolution radicale des habitudes alimentaires, avec en particulier une place croissante de la viande dans l’alimentation. Étant donné que l’élevage et le transport du bétail nécessitent plus d’intrants, de terres, d’eau et d’énergie que les plantes, l’accroissement de la demande en viande épuise les ressources naturelles, exerce des pressions sur les systèmes de production alimentaire, détruit les écosystèmes et contribue fortement aux changements climatiques.

La production de viande consomme presque dix fois plus d’eau que la production de calories et de protéines végétales. Il faut par exemple 15.415 litres d’eau pour produire un kilo de viande de bœuf. C’est également une manière peu efficace de produire des aliments : 30 calories végétales sont nécessaires pour donner 1 calorie animale.
