BERLÍN – La producción ganadera al estilo fabril es un elemento crucial de la industrialización agrícola. Su incontenible expansión produce cambio climático, deforestación, pérdida de biodiversidad y violaciones de los derechos humanos. Todo para satisfacer el insalubre apetito de carne barata de las sociedades occidentales.

Europa y Estados Unidos fueron los mayores consumidores de carne del siglo XX, con un consumo anual promedio de entre 60 y 90 kilogramos (132 a 198 libras) por persona: mucho más de lo necesario para satisfacer las necesidades nutricionales de los seres humanos. Si bien las tasas de consumo en Occidente han dejado de crecer, e incluso están disminuyendo en algunas regiones, todavía son mucho más altas que en la mayor parte del resto del planeta.

Entretanto, en las economías emergentes (especialmente el grupo denominado BRICS: Brasil, Rusia, India, China y Sudáfrica) las nuevas clases medias adoptan dietas cada vez más parecidas a las de sus pares en los países ricos. En las décadas venideras, conforme sus ingresos sigan elevándose, se producirá un consiguiente aumento de la demanda de carne y productos lácteos.
