旧金山—两大看起来无可指摘的营养箴言是所有饮食不健康的根源:“一卡(路里)就是一卡”和“吃啥变啥”。这两个说法在公众心中已是根深蒂固、不容挑战。结果,食品行业在道貌岸然的科学家和政客的协助和教唆下,让人类陷入了慢性新陈代谢病的折磨,让全球医保陷入了破产危险。

如今,美国每年要花费1470亿美元用于与肥胖有关的医疗。从前,人们会说,肥胖是富贵病,但去年联合国宣称慢性新陈代谢病(包括糖尿病、心脏病、癌症和痴呆症)对发展中国家的威胁要甚于包括艾滋病在内的传染病。

前述两大营养箴言给了食品行业自私的理由:既然一卡是一卡,那么任何食物都可以成为均衡膳食的组成部分;如果吃啥变啥,那么人人选择自己吃什么。这两种观点都是错的。
