Ernährung nach Plan?

Unser ganzes Leben lang sind wir einer komplexen Mischung aus Nahrungsmittelbestandteilen ausgesetzt. Durch komplizierte biochemische Prozesse werden aus unserer Nahrung Energie und andere wertvolle Bestandteile gewonnen, die wir für Wachstum und Körperfunktionen benötigen. Bei vielen in der Vergangenheit als unbedeutend eingestuften Nahrungsbestandteilen erkennt man heute deren Einfluss auf unsere Gesundheit. So sollen beispielsweise Lykopene, die in gekochter Tomatensauce vorkommen, die Entstehung von Prostatakrebs verhindern.

Wirklich jeder Mensch weiß, dass sich unsere Nahrung positiv oder negativ auf unsere Gesundheit auswirken kann. Nahrung wird nie eine spezielle Krankheit heilen können, aber ein Speiseplan mit viel Obst und Gemüse, Getreideprodukten und pflanzlichen Ölen bietet Schutz vor vielen Krebsarten, Herz-Kreislauf-Erkrankungen und anderen altersbedingten Krankheiten. Das Problem für Wissenschaftler aber auch für die Verbraucher ist, dass nicht alle Menschen in gleicher Wiese davon profitieren.

Wir müssen daher erkennen, wie sich unsere Nahrung und unser Körper - oder, genauer gesagt, unsere Gene - im Hinblick auf die gesundheitlichen Auswirkungen gegenseitig beeinflussen. Damit beschäftigt sich die Wissenschaft der Nutrigenomik. Das langfristige Ziel der Nutrigenomik ist, mit Hilfe der "Systembiologie" zu definieren, wie der gesamte Körper auf Nahrung reagiert.
