对气候友好的健康饮食

柏林——今年12月,世界领导人将在巴黎召开联合国气候变化大会,并将在会上敲定一项减少碳排放、遏制全球变暖的全面协议。在此次会议的预备阶段,世界各国政府应该注意一个关键、但却往往被忽视的事实:今天环境恶化和资源紧张的唯一最大推动力就是人类正在变化的饮食习惯——而且这种饮食习惯对健康生活也不太有利。

近几十年来,收入增加促成人类饮食习惯的重大变化,特别是肉类正在成为人类饮食越来越重要的特色。与植物相比,饲养及运输牲畜往往要消耗更多粮食、土地、水和能源,因此对肉类需求增加消耗自然资源、对粮食生产体系造成压力、损害生态系统并导致气候变化加剧。

肉类生产消耗的水资源约为植物热量及蛋白质的十倍以上,比方说生产一公斤牛肉需要消耗15,415升水。这种粮食生产方式也十分低效;需要消耗30植物卡路里才能生产出1肉类卡路里。
